A light, fresh Mediterranean-inspired salmon and green bean salad layered over tomatoes and chayote, flavored with lemon and herbs. In a large bowl, combine cherry tomatoes, sliced chayote, and cooled green beans. 4. In a small bowl, whisk together lemon juice, lemon zest, olive oil, chopped parsley, and dill to make the dressing. 5. Flake the cooked salmon into large pieces and add to the salad bowl. 6. Pour the dressing over the salad ingredients and gently toss to combine. 7.
