Tandoor-Style Samsa Dough * 500g flour (about 4 cups) * 285g water (1 cup + 3 tbsp) * 1 tsp salt * 1 tbsp vinegar * 1 tsp baking powder * 113g softened butter (1 stick), for the layers Filling * 500g lamb, finely diced (about 1.1 lb) * 1 onion, finely diced (about 1 cup) * 1 tsp salt * 1 tsp cumin * 1 tsp black pepper Instructions 1. In a bowl, mix the water, flour, baking powder, salt, and vinegar. Knead until the dough is smooth and soft. Cover and let it rest for 30 minutes. 2. While the dough is resting, mix the lamb with the onion, salt, cumin, and black pepper. Set aside so the meat can marinate while you prepare the dough. 3. Divide the dough into 2 pieces. Lightly dust your surface with cornstarch and roll each piece very thin. Spread the softened butter over the dough, layer the pieces together, then roll tightly into a log. Place in the freezer for 40 minutes. 4. Divide the chilled dough into 10 equal portions. Flatten each piece, roll it out, add the filling, and close it as shown in the video. Brush the tops with egg yolk mixed with a little milk, then dip the back of each samsa in egg white. 5. Preheat a Dutch oven or heavy pan until very, very hot. Add about 150g (½ cup) salt in the middle to help absorb moisture. Place the samsas around the sides and cover. Cook over medium-high heat for the first 5 minutes, then lower the gas to low heat. Open the lid about every 13 minutes to release the steam, then cover again and continue cooking. 6.
