part 2 of my 10 dozen sourdough dinner roll order i think it’s safe to say the bulk fermentation went well 😂 i made enough dough for an extra dozen just to make sure i wouldn’t come up short, and it worked out perfectly - exactly 132 rolls at 100 g each. tonight was all about dividing, weighing and shaping every single one before their overnight cold proof. tomorrow morning is part 3 - the baking marathon. 10 dozen baked, cooled, packaged and ready for pickup by 10:30 am. soft sourdough dinner rolls - 12 rolls 250 g whole milk 120 g active sourdough starter 1 large egg - about 50 g 30 g honey 20 g granulated sugar 450 g all-purpose flour 10 g buttermilk powder 8 g fine sea salt 60 g unsalted butter, softened egg wash 1 egg 1 tbsp whole milk melted butter for brushing mix everything except the butter, rest 20-30 minutes, and work in the softened butter. bulk ferment until beautifully risen, soft and puffy. divide and shape into 12 rolls. proof until puffy, or cover and cold proof overnight. brush with egg wash before baking. bake at 350°f for about 25-30 minutes. brush with melted butter while warm. part 3 tomorrow morning! #sourdough #sourdoughdinnerrolls #homebakery #sourdoughbaking #breadmaking
