 *2. For Chicken Curry with Potato*:
 - 800g 🍗 chicken, bone-in pieces - drumsticks/thighs
 - 2 🥔 potatoes, peeled + halved - the big chunk in the bowl
 - 3 tbsp 🧈 mustard oil or cooking oil
 - 2 🧅 large onions, finely sliced
 - 2 tbsp 🧄 ginger-garlic paste
 - 2 🍅 tomatoes, pureed + 1 tbsp 🍅 tomato paste
 - 1 tsp 🌶️ red chili powder + 2 tsp 🌶️ coriander powder + 1 tsp 🌿 cumin powder + ½ tsp 🧡 turmeric + ½ tsp 🌿 garam masala
 - 2 🍂 bay leaves + 1 inch 🌳 cinnamon + 3 🌿 cardamom
 - 1 cup 💧 hot water
 - 🧂 Salt to taste + 1 tsp 🍬 sugar
 - 🌿 Dhania/coriander, for garnish
 
 *Method to follow* 🔥
 
 *1. Chicken Curry with Potato*:
 1. *Fry potatoes*: Heat 2 tbsp oil. Fry 🥔 potato halves till golden. Remove. Same oil, sear 🍗 chicken pieces 3-4 mins till light brown. Remove.
 2. *Masala base*: In same oil, add whole spices + 2 🧅 sliced onions. Fry 10-12 mins medium heat till deep golden brown. This is key for color.
 3. *Bhuna*: Add 🧄 ginger-garlic paste. Fry 1 min. Add all dry spice powders except garam masala. Stir 30 sec. Add 🍅 tomato puree + paste. Cook 12-15 mins till thick, dark red, and oil separates.
 4. *Cook chicken*: Add seared chicken + 🧂 salt + 🍬 sugar. Bhuna/coat 5 mins on high heat. Add fried potatoes + 1 cup 💧 hot water.
 5. *Simmer*: Cover, simmer 20-25 mins till chicken + potato are tender and gravy is thick + oily. Sprinkle 🌿 garam masala. Rest 5 mins.

 3. *Veggies*: Add 🧄 ginger-garlic paste 1 min. Add 🥕 carrots + 🟢 peas. Stir 2 mins.
 4. *Rice*: Drain soaked 🍚 basmati. Add to pan. Fry gently 2-3 mins to coat each grain with ghee. Don’t break rice.
 5. *Cook*: Add 3½ cups 💧 hot water + 🧂 salt + 🍬 sugar. Bring to boil. Lower heat to lowest, cover tight. Cook 12-15 mins. Don’t open.
 6. *Finish*: Turn off heat. Rest 5 mins. Fluff with fork. Mix in fried cashews, raisins + 🌿 spring onion greens.
