The strength of dry stone walling lies in following the grain and natural lines of the stone so that each piece is as strong as possible. The one in the video doesn’t respect the stone’s natural veins.

Stop thinking "ancient techniques" were superior in any way. Modernisation is built on minor improvements over decades. Engineering standards of today are magnitudes ahead of almost anything just a few 100 years ago.

How exactly they get stronger with years? The weight stays the same, so its just as strong even after 100 years. Unlike concrete which chemically gets stronger with time.
