@farmtofirelouisiana: Brahman Hump 🐮🔥 This was our first time cooking a Brahman hump, and we decided to turn it into burnt ends. The hump is heavily marbled with fat and collagen throughout, so we knew it would take some time to fully render and get tender. We treated it similar to a brisket — starting it over open fire with @cowboy Brand Charcoal and pecan wood until it reached 165°F internal. At that point, we wrapped it with tallow and continued cooking until it hit 210°F internal. After that, we rested it overnight in a Cambro, cubed it up the next day, put it back over the open fire for a little char, and finished it with @Hunter Brown Grand Champion Reserve BBQ Sauce for that sweet melt in your mouth bite! Straight FIRE 🔥 Next hump might stay whole and get the full smoke treatment with SPG. #bbq #beef
