Lemon Olive Oil Cake! It’s gluten free, dairy free, and refined sugar free, and so delicious. It practically melts in your mouth! Cake: •1 1/2 cups almond flour •1 cup gluten free oat flour (I use homemade) •1 tsp baking soda •1 tsp baking powder •1/2 tsp salt •1/2 cup olive oil (I used Fresh Press Farms) •1/2 cup raw honey •1/3 cup fresh lemon juice •1 tbsp lemon zest •2 eggs Fruit Topping: •1 tbsp raw honey •2 tsp fresh lemon juice •1 tsp fruit based vinegar (optional — I used Fresh Press Farms Peach Cider Vinegar) •3 cups berries (or other fruit of choice) Instructions: 1. In a large bowl whisk together the eggs then add in the lemon juice, lemon zest, honey, and olive oil. Whisk well then add in the almond flour, oat flour, baking soda, baking powder, and salt, and mix until smooth. 2. Set the batter aside and preheat the oven to 350F. While the oven preheats, line an 8inch cake pan with parchment paper. Once the oven is preheated, pour the batter into the lined pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.  3. While the cake cools, prepare the fruit topping: whisk together the honey, lemon juice, and peach cider vinegar in a large bowl then add in 3 cups of berries. Mix well. 4. Once the cake has cooled, slice and serve!
