here in Finland we make small flat breads from barley still. in the old times that was what people mostly ate. with oats of course. barley and oats don't need so much nitrogen. that is, before the artificial fertilizers. I make barley flatbread sometimes still too. it tastes good with butter. and great with soups. you need only water, salt and barley flour. you can mix also root vegetables into it. like potatoes or turnips and so on. also certain type of moss can be added to it. it's called "rieska". I think it means "something to rip" that is to eat with hands. "repiä" is to rip and so "rieska" could be "something to rip"
