@gianlucaruggierichef: Aglio olio e peperoncino, but creamier than you’ve ever seen it 🌶️ The secret nobody talks about: blend the garlic, chili, oil and pasta water into a silky emulsion. That’s what turns three simple ingredients into something luxurious. Ingredients 80g spaghetti 4 tbsp olive oil 2 garlic cloves 1 ladle pasta water Chili to taste Recipe 1. Slice the garlic as thin as you can 2. Cook it gently in the oil with the chili until golden brown 3. Add a ladle of pasta water to the pan 4. Blend that garlic, chili, oil and water into a smooth emulsion 5. Meanwhile, cook the spaghetti in well salted water 6. Pour the blended emulsion back into the pan 7. Add the pasta and finish cooking it right in the sauce, tossing until creamy 8. Plate it up and serve Three ingredients. All technique. Save this one for your next quick dinner 🍝
