The kind of breakfast worthy of restaurant status, without the need for cheffy skills! Prep time 5 minutes Cook time 2-3 minutes Serves 1 (with some leftover) Ingredients 1 400g tin chickpeas, drained 1 tsp za’atar 1 tsp sumac Zest and juice of ½ lemon 30g dill, finely chopped plus extra to garnish 2 tbsp greek yoghurt 2 tbsp olive oil 1 tsp harissa 2 eggs Handful of pumpkin or sunflower seeds Method - Put the chickpeas, za’atar, sumac, lemon zest and juice, dill, greek yoghurt and a generous pinch of salt and pepper in a bowl. Mix to combine. Transfer half to a small tupperware and refrigerate (you can make this recipe again over the coming days, or just enjoy the chickpeas on their own.) - Place a non-stick frying pan over a medium heat with the olive oil and harissa. Mix to combine and when sizzling, crack the eggs into the pan. Cook for 2-3 minutes , or until the whites are set and the yolks are still runny. Season with salt and pepper. - Spoon the chickpeas onto a plate, top with the fried eggs, drizzle the harissa oil all over and garnish with some extra dill and the pumpkin seeds. #cookingforone #breakfastrecipe #brunchrecipe #friedeggs #recipeforone
