@jessthomofit: Garlic parmesan chicken with smashed baby potatoes and my favourite summer tomato salad 🤤 A whole food focussed, easy and high protein dinner idea for you to add to this week’s meal plan with over 80g of protein per serving! Serves 2: For the chicken - 574g chicken breast (cut into chunks) 4 big garlic cloves Zest of 1 lemon Juice of 1/2 lemon 2 tbsp olive oil 40g parmesan 1/2 tsp oregano Salt & pepper For the potatoes - 500g baby potatoes Couple of olive oil spray’s Salt 1. Start by marinating the chicken in the ingredients listed, leave for minimum of 30 minutes. 2. Wash the potatoes and then boil until soft (about 15 minutes) then add to a large lined baking sheet and press down with the bottom of a glass. 3. Spray with olive oil, sprinkle with salt and roast in the oven at 220C for 25-30 mins until crunchy and golden. 4. Preheat your air fryer to 200C then cook the chicken for 12-14 minutes (until golden with a crunchy edge) 5.
