Raspberry Coconut Chia Pudding 🌸 I don’t know about you, but I sleep better knowing breakfast is already sorted.. This raspberry + coconut chia pudding comes together in seconds and is the perfect little jar of joy to keep on hand. Snack, brekky on the go, or a topper for your morning yoghurt or granola bow, it has you covered. Ingredients:
– ¾ cup coconut milk
– ½ cup frozen raspberries
– ¼ cup chia seeds
– Dash of maple syrup
– ½ tsp vanilla extract Method:
Pop the milk, berries, maple syrup and vanilla into a blender and blitz until smooth. Pour over your chia seeds and stir really well to make sure they’re fully coated. This helps prevent clumping. I find a small whisk works best here.  Let it set in the fridge for a few hours, or overnight. If your milk is on the thicker side (coconut and organic nut milks), you might need to add a splash of water to thin it out.
