Ramadan Series – Episode 6 🌙 Beef Tacos Ingredients For the beef filling 200 g minced beef 2 tablespoons oil 1 onion chopped 1 tablespoon ginger garlic 1 bay leaf 1 teaspoon chilli powder ¼ teaspoon turmeric powder 2 teaspoons chilli flakes 1 teaspoon pepper powder Salt as needed 1 tablespoon tomato paste ½ cup chopped bell peppers 1 cup grated cheese 8 tortillas For the salad 1 cup cucumber chopped ½ cup onion finely sliced 1 green chilli chopped 1 tablespoon lemon juice Salt as needed Method Heat oil in a pan. Add the chopped onion and sauté until soft. Add the minced beef and cook until the colour changes and the moisture reduces. Add bay leaf, ginger garlic, chilli powder, turmeric, chilli flakes, pepper powder, salt and tomato paste. Mix well and cook until the beef is fully cooked through and nicely coated with the spices. Add the chopped bell peppers and cook for 3 to 5 minutes. Turn off the heat. In the same pan, place a tortilla. Add some grated cheese on one half, then spoon the beef mixture over it. Fold the tortilla in half and press gently. Fry on both sides until golden and the cheese has melted. Repeat with the remaining tortillas. Mix all the salad ingredients together in a bowl.
