Nalli Wali Chapli  In a food processor, blitz 2 red onions, a bunch of fresh coriander and 5 large green chillies until finely chopped. Set aside, but remember to reserve 3 tablespoons of this mixture for the yoghurt chutney later. In a large bowl, add 1kg beef mince, making sure it’s as dry as possible. Mix in 2 tsp garlic purée and 3 tsp ginger purée. (If using fresh, grate 4 garlic cloves with a 5cm piece of ginger.) Mix everything together really well. Add the onion, coriander and chilli mixture to the mince and combine thoroughly. Using a pestle and mortar, coarsely crush 2 tbsp cumin seeds and 2 tbsp coriander seeds. Add them to the mince, followed by 1 tbsp crushed red chillies, 1 tbsp coarsely cracked black pepper, 1 tbsp salt (adjust after frying your first kebab if needed) and ¼ tsp ajwain. Mix until everything is evenly distributed. Finely dice 2 medium vine tomatoes, then squeeze out as much liquid as possible before adding them to the mixture. Mix again until fully combined. If your mixture feels a little wet, add 2 tbsp maize flour. This is optional but helps bind the kebabs if needed. Cut your bone marrow (nalli) into small chunks and set aside. Heat a generous layer of beef tallow in a large frying pan for the most authentic flavour. You can also use your preferred frying oil if you don’t have tallow. Shape the mince into palm-sized patties, keeping them neither too thick nor too thin. Press a few chunks of bone marrow into the top of each kebab, then carefully place them into the hot pan, marrow side up. Shallow fry until deeply golden on one side, then gently flip and cook until the kebabs are beautifully browned, cooked through and the marrow has softened into the meat. Yoghurt Chutney Add the reserved 3 tbsp onion, coriander and chilli mixture to a blender with 6 tbsp Greek yoghurt, 3 tsp lemon juice and a pinch of salt. Blend until smooth, then taste and adjust with more salt, lemon or chilli if you like.
