Can you try to do calf raises right after eating something that would typically spike blood sugar and see if it spikes your blood sugar?

Your test it is not really accurate, because you didn't specified the ingredients from that white bread. Maybe the bread has other ingredients, that could spike your blood sugar and that are not affected by freezing. You should try with just a simple bread, made just with flour, water, yeast and olive oil and it is possible to have different results.

plus isnt the so called fresh bread chilled to a certain temperature whilst sat in factory > transportation>supermarket warehouse cold chiller...etc
