Combine glutinous rice flour, cornstarch and sugar in a microwave safe bowl. Add soy milk and whisk until smooth. Cover with a microwave safe plastic wrap, poke it a few times and microwave for 3 minutes. 2. Use a hand / stand mixer with a dough hook on low speed to soften the dough until it’s very smooth. Add the vegan butter and continue mixing until it’s smooth and light in color. Cover with the plastic wrap from earlier and refrigerate. 3. Make the filling: I used vegan whipped cream, banana and vegan caramel sauce, but you can use whatever you like. 4. Divide the dough into 6-8 pieces, flour the surface with cornstarch and roll each piece to a thin circle. Place it on a small bowl, add the filling and pinch the edges. Use a scissors to cut the leftovers and top with a bit of cornstarch to prevent it from sticking. Serve immediately or after refrigerating for 30-60 minutes.
