Prep your peppers 🎃   Cut the tops off the orange bell peppers and remove the seeds. Carefully carve little jack-o’-lantern faces into the sides. 2. Make the enchilada sauce 🌶️   Remove the stems and seeds from the guajillo and ancho chiles. Boil them until softened, then blend with onion, garlic, chicken bouillon, and some of the chile water until smooth. 3. Make the filling 🥩   Add mozzarella cheese  Cook your ground beef and season it with paprika, black pepper, Lawry’s, onion powder, and garlic powder. 4. Add your diced zucchini, onion, and tomato to the ground beef and cook everything together until the veggies soften. 5. Pour in some of your homemade enchilada sauce and mix everything together until the filling is nice and saucy. 6. Stuff the pumpkins 🎃   Fill each orange bell pepper with the ground beef and veggie mixture. Place the tops back on. 7. Bake   Place them in a baking dish and bake at 375°F for about 20 minutes, or until the bell peppers are tender to your liking. And that’s it!
