كيماك التركي بالجبنة Türkischer Kuymak mit Käse ‏Zutaten: * 2 EL Butter * 3 EL Maismehl * ca. 220 ml Wasser * 200 g Käse, z. B. Eskişehir-/Kaschar-Käse oder ein gut schmelzender Käse * Salz nach Geschmack Zubereitung: Butter in einer Pfanne schmelzen. Maismehl dazugeben und kurz anrösten, bis es leicht goldbraun wird. Das Wasser nach und nach unter ständigem Rühren dazugeben, bis die gewünschte Konsistenz erreicht ist. Anschließend den Käse hinzufügen und weiterrühren, bis er vollständig geschmolzen ist und der Kuymak schön cremig und Fäden ziehend wird. Falls nötig, etwas Salz dazugeben. المقادير: * ٢ ملعقة كبيرة زبدة * ٣ ملاعق كبيرة طحين ذرة * حوالي ٢٢٠ مل ماء * ٢٠٠ غ جبنة، مثل جبنة إشكشهير (Eskişehir) أو قشقوان، أو أي جبنة بتذوب منيح * ملح حسب الرغبة طريقة التحضير: نذوّب الزبدة في مقلاة، ثم نضيف طحين الذرة ونحمّصه قليلًا حتى يصير لونه ذهبي فاتح. نضيف الماء تدريجيًا مع التحريك المستمر حتى نوصل للقوام المطلوب. بعدها نضيف الجبنة ونحرّك حتى تذوب بالكامل ويصير الكويماك كريمي والجبنة فيه بتشدّ خيوط. إذا لزم الأمر، نضيف قليلًا من الملح #kuymak #كايماك
