Day 56 of starting solid foods with my baby, baby led weaning style 🤝 Tomahawk steak with chimmichurri and compounded butter, steak recipe below - she wasn’t a fan. Ended up giving her a leftover piece the next day and she ended up gnawing on it! In baby led weaning babies often just suck juices and explore the texture rather than eating large chunks, it's a great way to introduce iron. See full recipe below!  Compound butter:  Ingredients: * 1 stick (1/2 cup) unsalted butter, softened to room temperature * 2-3 cloves fresh garlic, finely minced or grated * 2 tbsp fresh parsley, finely chopped * 1 tbsp fresh chives, finely chopped * 1 tbsp fresh rosemary, finely chopped * 1 tsp lemon zest (optional, but adds brightness) * 1/2 tsp kosher salt, or to taste * 1/4 tsp black pepper, or to taste  Instructions: 1. Combine ingredients: In a medium bowl, mash all ingredients together with a fork or spatula until evenly combined. 2. Shape: Scrape the mixture onto a piece of plastic wrap or parchment paper. Form it into a log shape and roll it up tightly, twisting the ends like a candy wrapper to seal. 3. Chill: Refrigerate for at least one hour (or freeze for 15-20 minutes) until the butter is firm enough to slice.  Chimichurri sauce:  Ingredients:  * 1 cup fresh flat-leaf parsley, finely chopped (leaves and tender stems) * ¼ cup fresh oregano leaves, finely chopped (or 2 tsp dried oregano) * 3-4 cloves garlic, finely minced * ½ small shallot or red onion, finely chopped (optional) * ½ cup extra-virgin olive oil * ¼ cup red wine vinegar * ½ - 1 tsp crushed red pepper flakes (to taste) * 1 tsp coarse salt, plus more to taste * ½ tsp black pepper, to taste  Instructions:  1. Combine aromatics: In a medium bowl, combine the minced garlic, shallots (if using), red pepper flakes, and red wine vinegar. Let this mixture sit for about 10 minutes to soften the sharp flavor of the raw garlic and shallot. 2. Add herbs and seasoning: Stir in the finely chopped parsley and oregano. 3. Incorporate oil: Using a fork or a small whisk, gradually whisk in the extra-virgin olive oil until well combined and the mixture forms a loose emulsion. 4. Season and rest: Season with salt and pepper to taste. Let the sauce rest for at least 1 hour at room temperature for the flavors to blend, or refrigerate in an airtight container for up to a few days.
