1. Wet Fry Beef Stew / Nyama* 🥩 Ingredients: - 1kg beef, cubed - use stewing beef/chuck 🥩 - 2 large onions, chopped 🧅 - 4 tomatoes, blended 🍅 + 2 tbsp tomato paste - 1 tbsp ginger-garlic paste 🧄 - 2 tsp beef masala/royco + 1 tsp paprika 🌶️ - 1 tsp black pepper + salt 🧂 - 2 bay leaves 🌿 + 1 cinnamon stick optional - 4 tbsp oil 🛢️ - 1 cup hot water 💧 - Fresh dhania/coriander for garnish 🌿 Steps: 1. Sear for color : Pat beef dry. Heat oil on HIGH 🔥. Brown beef cubes in batches till dark brown all sides. This = that deep brown color. Remove & set aside. 2. Base : In same oil, fry onions 🧅 till caramelized 7-8 min. Add ginger-garlic 🧄 + spices + bay leaves. Cook 1 min. 3. Simmer : Add blended tomatoes 🍅 + paste. Cook till oil separates ∼6 min. 4. Tender : Return beef + hot water. Cover, simmer on LOW 1.5-2 hrs till beef is soft + gravy is thick. Add water little by little if it dries. 5. Garnish with dhania 🌿 before serving. 2. Ugali / Sima 🌽 Ingredients: - 4 cups water 💧 + pinch salt 🧂 - 2 cups white maize flour / unga Steps: 1. Boil water. Add 1 cup flour, stir to make smooth porridge. 2. Add rest of flour gradually, keep stirring with mwiko till firm + no lumps ∼5 min. 3. Mold into a dome with a wet spoon. 3. Sukuma Wiki🥬 Ingredients: - 1 bunch sukuma/kale, chopped fine - 1 small onion, sliced 🧅 - 1 tomato, chopped 🍅 - Salt + 2 tbsp oil + 2 tbsp milk/mala optional steps: 1. Fry onions 🧅 till soft. Add tomato + salt, cook 2 min. 2. Add sukuma, toss 5 min till tender but still green. 3. Add milk at end for "sukuma ya maziwa" - gives that rich look. #biteintohappinesswithchefftindixenjoy😚💕
