You can play challenge runs if you've gotten your way through the game via cheap grinding. My best suggestion as a challenge that i'm currently doing and find fun, is to do a boss only challenge alongside nightmare spirits and fairytales. This gives a genuine real game experience as opposed to just steamrolling through the game. If you've done a no enemy run then you can also do a no soul level after, albeit it's gonna be quite difficult so you can't casually play it, you need some form of strategy.

I beated every single mob in +9 difficulty, then I completed the library, then I completed the character index and I finished by getting all the items (swords/shield/armor/heal/effect/ring/ect) and I upgraded max every weapon

You can go for a challenge run and set yourself a challenge, I'm doing a ring of fragile life difficulty 9. runs with this ring all your parameters decreases by 99% even with the max stat you will get only ~1099 (from 109998) of all stats, you will face a lot of AP abusive from bosses due to your low AGI it makes AP scaling far worse from before. this challenge is indeed frustrating to do but it pretty fun where you have to calculate AP threshold between boss and you, like how many AP boss will get, and how well you are prepared to get your ass beat when your turn is over
