(the saxophones kept getting louder btw…🤣) (for the red velvet cake): - 150ml sunflower oil - 15ml red food colouring gel - 2 eggs - 200ml buttermilk - 2tsp vanilla extract  - 250g light brown soft sugar - 1tbsp cocoa powder - 250g plain flour - 2tsp baking powder - 1tsp bicarbonate of soda (for the cream cheese frosting): - 200g unsalted butter, softened - 200g cream cheese - 1tsp vanilla extract - 400g icing sugar (for decoration): - 150g fresh strawberries, halved - 15g dark chocolate, melted method: 1. begin by whisking the oil, food colouring gel, eggs, vanilla, and buttermilk in a large bowl until thoroughly combined. 2. add in the sugar, cocoa, flour, baking powder and bicarbonate of soda and whisk until silky smooth and no lumps remain. 3. pour evenly into 2 lined & greased 20cm round baking tins. 4. bake at 180c / 160 fan for 25-30 minutes or until risen and a skewer comes out clean after poking all the way through! 5. remove from the oven and allow to sit in the tin for 10 minutes before cool enough to touch. carefully remove the cake from the tins and place on a cooling rack to cool completely. 6. meanwhile, place the butter, cream cheese and vanilla extract in a large bowl and roughly mix with a fork. 7. add 3/4 tbsp of icing sugar and whisk until incorporated. gradually add the icing sugar in stages and whisk until you have used up all of the sugar (if you add it all at once, it will go everywhere!). whisk until silky smooth. 8. place one half of the cake upside down on a serving plate and spoon about 1/3 of your butter cream on top. 9. smooth out using a palette knife. 10. place the second cake half (face up) on top. 11. spoon over the rest of the butter cream and cover the entire cake evenly. 12. smooth out as best you can (it doesn’t need to be perfect!). 13. place in the fridge for at least 30 minutes. 14. meanwhile, half the strawberries and melt the chocolate in the microwave for about 1 minute. 15. place the chocolate into a plastic piping bag and cut a very small hole at the end of the bag. 16. evenly spread the strawberries face down on any surface and begin rapidly piping the chocolate all over in rows. 17. remove the cake from the fridge and carefully place the strawberries all around the cake in a uniform circle. 18. place the cake in the fridge until ready to serve… 19. slice into thick slices and enjoy with a cup of tea xxx enjoy🍓🍓🍓 #EasyRecipes #redvelvet #cake #baking #birthday
