However, a Ghanaian medical professional has issued a sobering warning to food lovers: frequent consumption of kanzo might be increasing your risk of developing cancer. The medical warning notes that kanzo isn't the only culprit in the traditional Ghanaian diet. Any starchy food that is over-fried, roasted, or burnt to a crisp can harbor high levels of acrylamide. Public health advocates advise caution when consuming: Plantain chips that have been fried until dark brown. Burnt toast or heavily charred bread. Chofi (turkey tails) or meats that are heavily charred during grilling or frying. Over-roasted maize or yams.According to medical experts, the danger does not lie in the rice itself, but in the high-temperature cooking process that creates the crunchy texture. When starchy foods are subjected to extreme heat or prolonged burning, a chemical compound called acrylamide is formed. "When you burn or intensely scorch starchy foods like rice, a chemical reaction occurs between the sugars and an amino acid called asparagine," the doctor explained.
