@courtneylcook: Carolyn’s Greek Salad Recipe 👇 2 English cucumbers, peeled and diced 2 cups cherry tomatoes, halved 1/2 red onion, minced 1 cup black olives, halved (optional) Juice of 1 lemon 2-3 tablespoons extra virgin olive oil 1 (8-ounce) chunk good-quality feta 2 teaspoons finely chopped mint Salt and pepper, to taste Greek seasoning, to taste Add everything to a large bowl and mix well.
