The BEST batata béchamel I have ever tasted !! Recipe is by @hendalikassem the best cook I know ❤️ Batata Béchamel: Sweet potatoes: 2kg (weighed peeled) sweet potatoes; about 2 1/2-2 3/4kg unpeeled  2 cups (400g) sugar  Béchamel:  90g (6 1/2T) butter 54g (about 1/3c + 1 1/2T) flour  2 cups (473ml) whole milk 2 cups (473 ml) whipping cream  Reduced liquid from sweet potatoes  Topping:  Caramel sauce or dulce de leche, optional  Wash, dry and peel sweet potatoes. Cut into large chunks and weigh to make sure they’re 2kg. In a large bowl combine sweet potatoes with the sugar. Stir, cover and let rest overnight or a minimum of 3-4 hours until the sweet potatoes release so much liquid that almost covers the surface of the potatoes.  Preheat oven to 200C.  Transfer the sweet potatoes and its liquid into a large pot and cook slightly covered over medium high heat until fully cooked and fork tender, about 20 minutes.  Transfer the sweet potatoes & its liquid into a colander set over a bowl. Strain the liquid into the bowl. Pour the liquid back into the pot and place the sweet potatoes into the now empty bowl. Cook down the liquid uncovered until reduced to the consistency of maple syrup.  Take 1/4 cup of the reduced liquid and stir into the sweet potatoes to glaze.  To make the béchamel, in a medium saucepan, melt the butter over medium high heat, whisk in the flour and cook for about a minute. Gradually whisk in the milk and cream until smooth and cook whisking constantly until a few big bubbles burst over the surface and mixture in thickened. Remove from heat and stir in remaining reduced syrup.  Spread a thin layer of béchamel over the bottom of the baking dish. Then layer in the sweet potatoes and finally pour over the remaining béchamel. Drizzle store bought or homemade caramel sauce over the surface and swirl around.  Cook until bubbling around the edges and surface is lightly golden, about 20 minutes. Turn on the broiler for a few minutes, if needed, to get a nice color on the surface.
