its also the TASTE. Real ceylon cinnamon slightly stings and leaves the tip of your tongue a bit numb. its very strong - a little goes a long way. When bakers on cooking shows say '2 tablespoons of cinnamon' i know their using some other thing, cos 2 tablespoons of cinnamon is A LOT!
