our favourite cottage cheese pancakes made even simpler…@KitchenAid UK 🍋 (makes 8-10) you’ll need: - 300g full fat cottage cheese  - zest of 1 lemon - juice of 1/2 a lemon - 3tbsp honey / maple syrup  - 2 eggs  - 50ml milk  - 150g plain flour (you may need a little more depending on how large your eggs are!) - 2tsp baking powder  - 2tbsp butter for frying (to serve): - Greek yogurt  - lemon wedges - extra honey / maple syrup  method: 1. begin by placing the cottage cheese, lemon zest, lemon juice, honey (or maple syrup), eggs, milk, flour and baking powder into your KitchenAid Pure Power Blender.  2. turn the power on, close the lid tight, and blend on number 2 to begin with. if we were dealing with a very hot mixture (such as a soup!), i would recommend opening the vented lid to allow steam to escape! 3. after 30 seconds, you can turn the level up to 4 or 5 to ensure the batter is silky smooth….the variable speeds go from 1-10 so you can precisely blend to whatever texture you like! in this instance, we need it super smooth. 4. remove the container from the base and set to one side. 5. in a medium sized frying pan, melt 1tbsp of the butter on a medium heat. 6. carefully spoon about 2tbsp of pancake batter per pancake into rounds on the pan. 7. fry for a few minutes on each side or until golden brown. remove from the pan and repeat with the rest of the batter. 8. serve in a stack or however many you like, and top with a generous dollop of Greek yogurt (or leave as they are!).  9. place a lemon wedge on top and finally, drizzle with some honey or maple syrup… (optional) for the perfect blueberry smoothie to accompany these pancakes: simply blend 1 cup of frozen blueberries, 1 ripe banana, 1/2 cup of Greek yogurt, 1/2 cup of any milk & 1tbsp of maple syrup on the KitchenAid Pure Power Blender ‘Smoothie Cycle’ to ensure the frozen ingredients are blended adequately! enjoy xxx🍋🥞🫐 #ad #kitchenaidambassador
