There’s something truly elite about this dish. Gavros baked with garlic, parsley, and tomatoes is proof that you don’t need complicated techniques or endless ingredients to create something extraordinary. Just a few fresh elements, good olive oil, and a little care… and you have a dish that tastes like the Greek coastline itself. The song is “Stalia Stalia” by Marinella—a truly legendary Greek singer we recently lost. This is one of my personal favorite songs of hers… emotional, timeless, and so deeply connected to Greek memory and feeling. INGREDIENTS (for a 10x12 inch / 22x33 cm baking pan) • 2 lb (1 kg) gavros or sardines cleaned (about 3.3 lb / 1.5 kg before cleaning) • 1 (1/2) 40 g chopped parsley (leaves only) • 4 garlic cloves, finely chopped • 4 big tomatoes, blended • 2/3 cup (160 ml) extra virgin olive oil • Salt, to taste INSTRUCTIONS Preheat your oven to 350°F (180°C). Add half of the olive oil to the bottom of your baking pan. Spoon in a small amount of the blended tomatoes. Sprinkle a little garlic and parsley over the base. Arrange the fish side by side, nice and neat. Season with salt. Add the remaining garlic and parsley evenly on top. Carefully pour over the rest of the tomato sauce, making sure not to disturb the fish. Finish by gently drizzling the remaining olive oil on top. Bake uncovered for about 40 minutes, until the fish is tender and the sauce is rich and slightly caramelized. #gavros #bakedgavros #greekcuisine🇬🇷 #alexandrashome #fypシ゚viral
