@daniela_dish: Summer Tomato Basil Orzo Soup I know most don’t think of soup when planning summer recipes, but this one pot wonder will change your mind. It has summers best flavors with garden ripe tomatoes and fresh basil. It’s done in one pot and under 30 minutes for a light delicious meal that your family will love. All you need to complete this meal is some crusty bread and a freshly dressed salad. 3-4 tablespoons olive oil 1/2 onion chopped 1 carrot chopped 2 celery ribs chopped 2 garlic cloves chopped 2 1/2 lbs Roma tomatoes diced 4-5 cups chicken or vegetable broth Salt and pepper 1 c dried orzo 1/2 c fresh chopped basil In a large stock pot heat the olive oil and add the onion and, carrot, celery and garlic. Saute for about 5 minutes and add the tomatoes and 4 cups of broth. Bring to a boil and reduce heat and cover for about 10 minutes. Add the orzo and cover again and let it simmer until the orzo is tender. If it’s too dry add remaining broth. About 10 more minutes. literally not a crumb of seasonings, not even salt and a pinch of sugar tk cut the acidity of the tomatoes is actually insane to me

Looks great but the pasta will soak up most of the broth on sitting so leftover soup will be very thick with almost no liquid left. Better to precook the orzo, put some in a bowl then pour the soup over it. Italians do this. Now you’ll have consistent soup without the mushy pasta.
