@kaylaeverydayeats: The perfect ‘crunchy outside, fluffy inside’ bread roll 🍞🧈 I’ve tried a lot of bread and bread roll recipes at this point but this one is by far the best. We may have eaten half of them in the first hour 🥲 Ingredients: * 500g plain flour * 7g instant dry yeast * 12g salt * 414g warm water (a temp you would bathe in) Method: 1️⃣ Combine the dry ingredients in a large bowl. Make a well in the centre and add the water. Mix until there is no flour left on the bottom. Cover and set aside for 20 minutes. 2️⃣ Wet your hand, grab a portion of the dough, stretch it up, then fold it over onto itself. Rotate the bowl a quarter turn and repeat 3 more times to complete one set of stretch-and-folds. Set aside for another 20-30 minutes and repeat another two sets of stretch-and-folds - 3 in total. 3️⃣ After the third set, cover and set the bowl aside for the dough to double, ideally in a warm spot. It should take 30-60 minutes. 4️⃣ Lay out a lot of flour on a clean bench, this is a higher hydration dough and can be tricky to work with. For a dinner roll size - 45-50g each For a proper sandwich roll size - 75-80g each With each piece, stretch the edges toward the center and pinch to create a seam. See video for reference. Repeat and lay them all on a large sheet tray (you may need to do two batches) 5️⃣ Cover rolls and allow to rise for another 30 minutes. Using a sharp knife or bread lame, lightly slice the top of each roll. After 15 minutes, preheat the oven to 230c with a tray of water in the bottom to create steam. 6️⃣ With the oven preheated and water steaming, bake the rolls at 230c for 14-18 minutes. They should be golden brown on top. 7️⃣ Once cooked, leave in the oven with the steamy water for another 15 minutes and take out to cool.
