use cold water and put the cold water on a flat plate and dip it in it gives you longer to work with it and doesnt break ;)

I learned that the reason for them breaking is using hot water to wet the sheets and time it takes you to fill and roll. If you use cold water it takes a bit longer for it to soften. Also what I like to do is try to wet it quickly because enough water gets on it for it to soak it up while I’m filling it. If you hold it under the water too long, it gives the sheet more to soak up which makes them get too soft and break.

when you wet your rice paper just run water on both side’s quickly so its still a little hard then by the time you got all your ingredients in it should be softened up to roll easier
