RECIPE: dot cakes 🌈 at home… I’ve been seeing all of the dot cakes review videos and I needed to recreate them at home. started with vanilla… what flavor should I recreate next? you NEED to give this recipe a try 😍 . DOT CAKES (makes 4 7 oz cake jars) CAKE: 1 stick unsalted butter, softened 1 cup white granulated sugar 2 eggs 1 tsp vanilla extract or paste 1/2 tsp salt 1 3/4 tsp baking powder 1 1/4 cup plus 2 tablespoons all purpose flour 1/3 cup milk 3 tbsp greek yogurt or sour cream Squeeze of a lemon (~1 tsp)  BUTTERCREAM: 1 stick unsalted butter, softened 1 tsp vanilla extract/ paste 1/4 tsp salt 2 cups powdered sugar 1 tbsp milk (as needed to reach a smooth consistency) 1/2 cup rainbow nonpareil sprinkles  . Preheat your oven to 350°F. Cream together the butter and sugar. Add eggs one at a time and mix until smooth. In a separate bowl, whisk your flour, baking powder, and salt. Whisk your milk, lemon juice, yogurt, and extract in a separate jug. Add 1/2 of the dry mixture to the butter mixture and mix to combine. Add the milk mixture and mix to combine. Finish on the rest of the dry mixture. Grease a 1/4 sheet pan and line it with parchment paper. Transfer the batter to the pan and smooth the batter into an even layer.  Bake for 18-22 minutes or until golden brown and a toothpick inserted comes out with a few moist crumbs. To make the buttercream. To make the buttercream, whip together the butter, salt, and vanilla extract. Add powdered sugar, 1 cup at a time, adding milk as needed to help the frosting reach a smooth consistency. Transfer half of the frosting to a piping bag. Once the cake is out of the oven and fully cooled, cut circles of the cake that are the same size as your jar (I used 7oz jars but smaller jars would work really well and would yield more cakes). Layer a cake circle, pipe a layer of frosting, and then top with another cake circle. Add a scoop of frosting on top, smooth into an even layer with another cake circle offset spatula, and then dip the entire cake top into the nonpareil sprinkles (as shown in the video).
