Lemony salmon, creamy orzo, and fresh veggies = weeknight perfection✨ Ingredients: -2.5 cups uncooked orzo -3 salmon fillets, cubed (skin removed) -2 cups frozen peas -1 zucchini, chopped -6 stalks asparagus, chopped -1 medium shallot, diced -6 cloves of garlic, minced -3 tbsp. fresh dill, chopped (plus extra for garnish) -zest and juice of 1 lemon (plus extra for garnish) -3 cups chicken broth (plus extra if needed) -1 cup heavy cream or whole milk -1/2 cup white wine -salt and pepper to taste Directions: Add your orzo, peas, asparagus, zucchini, dill, shallot, garlic, broth, heavy cream, white wine, lemon juice and zest and salt/pepper to a 9x13 baking dish. Stir to evenly combine. Cover with aluminum foil and bake in a 400°F oven for 30-35 minutes, or until pasta has started to absorb liquid and is becoming al dente. Remove the aluminum foil and stir gently. Fold in cubed salmon and spread orzo mixture evenly. If mixture seems dry, add an additional 1/2 cup of broth, stirring gently. Top with lemon slices. Bake for an additional 15-20 minutes uncovered, or until salmon is fully cooked through. Allow to cool for 10 minutes before serving with fresh dill on top!
