🎀 LAZY GIRL DINNER 🎀 One pot lasagna soup 🍝 Serves 4: Ingredients: 1 tbs olive oil 1 onion, diced 2 cloves of garlic, minced 500g beef mince 2 bay leaves 2 tsp oregano 2 tsp chilli flakes 2 tsp dried basil 2 tbsp tomato paste 2 carrots, diced 2 celery stalks, diced 1 tin chopped tomatoes 1 beef stock cube dissolved in 1 litre boiling water Salt & pepper to taste 250g lasagne sheets, broken 100g mozzarella Ricotta topping: 60g ricotta cheese 40g parmesan Fresh basil Method 1. add your olive oil to a pot and sauté the onion, carrots, celery and garlic for 2 minutes. Add the mince, break it down and cook until browned. Season with salt generously 2. Season with oregano, basil, bay leaves & chilli flakes. Add the tomato paste, chopped tomatoes and beef stock. Season with salt and pepper. 3. Add the broken lasagne sheets and stir. Bring to the boil then reduce to a simmer for 15-20 minutes until most of the liquid has absorbed but it still has a soupy consistency. 4. Stir through the mozzarella until melted. 5. For the ricotta topping, in a bowl mix together your ricotta, parmesan and basil.​​​​​​​​​​​​​​​​ 6. Dollop on-top of your soup and enjoy 😊
