She’s turned the ultimate British comfort dessert into a dark chocolate bark that satisfies your sweet tooth while actually doing your body some good. The secret to that deep, caramelised sweetness is dates. They bring all the traditional sticky toffee flavour without any added refined sugar. By layering them with pecans for heart-healthy monounsaturated fats and chia seeds for a hidden fibre boost, you get a snack that releases energy slowly. Ingredients 200g dark chocolate, chopped 6 soft medjool dates, chopped 2 tbsp almond butter 1 tbsp maple syrup ½ tsp vanilla extract 40g pecans, chopped ½ tbsp chia seeds Pinch of flaky salt Method Step 1 Melt the chocolate in short bursts in the microwave, stirring every 20 secs until smooth. Spoon onto a parchment-lined tray or board and spread into a thin layer, roughly 35 x 20cm. Step 2 Mix the dates, almond butter, maple syrup and vanilla in a bowl, mashing slightly until sticky and chunky. Spoon small amounts of the mixture over the melted chocolate. Scatter over the pecans, chia seeds and a pinch of flaky salt. Step 3 Chill for 1 hr, or until fully set.
