I like the idea that his story is NEVER true he always lies about it. He’s a gangster, he was a loving husband, he had one bad day, he was a regular guy, he was always the joker, It be a good part of his personality if he always lied / made up / couldn’t remember his own backstory

Any adaptation that treats the “One bad day” thing as a legit reason for Joker being the way he is missed the point, too! Because while TKJ has its issues, it disproves that idea by having Jim Gordon remain a good person even after everything that happens in it.

Agreed, giving the Joker a sympathetic back story takes away from his character and makes him more understandable like any run of the mill down on their luck villian, when what makes him so fascinating is that he has zero redeemable qualities and is so alien in his motivations and violence.
