When you book the restaurant first and the flights after - kind of my way of taking the trips and this one started with a reservation, not a destination too. 😄 Six months in advance, we booked what is often considered the best restaurant in the world (and the one that is hard to reserve too!). 🎉 Finally securing a table at @noma (yes, we had a proper strategy), after wanting to visit for so many years, already felt like a special moment. But being there in person and experiencing it live, not just through photos and reviews, was something else.  Dreams come true type of a moment?  Noma 2.0 is a three @The MICHELIN Guide star restaurant in Copenhagen, led by @René Redzepi, and one of the most influential restaurants in the world.  It is part of The World’s Best of the Best list after winning the 50 Best Restaurants for several years and without question a bucket list experience for any serious foodie. It has a high price point (550 € per person at the time) but seeing how much work it goes into menu like this and how much stuff it takes to create and run this experience it makes a lot of sense.  We visited in summer for the vegetable menu. Beyond the flavours, creativity and precision on the plate, there were several details that made the experience even more memorable. René also shared that this would be the final season of Noma 2.0, which made the whole visit feel even more special. So check the five things that really stayed with me.
