This is great BUT if you make the rice ahead and freeze it the starch becomes resistant. Better for insulin resistance.

I’d probably sub 1C rice for 1/2C each Lentil and Quinoa. Little addition of plant proteins and fiber for nearly the same calorie count. Love the recipe though
