Make the mashed potatoes 1. Boil potatoes in salted water until fork-tender (15–20 minutes). 2. Drain well. 3. Mash with butter, warm milk, salt, pepper, and cream cheese if using. 4. Cover to keep warm. 2. Cook the onions 1. Heat butter and olive oil in a large skillet. 2. Add sliced onions with a pinch of salt. 3. Cook over medium-low heat for 20–25 minutes, stirring often, until deep golden and caramelized. 4. Stir in the garlic and cook for 1 minute. 3. Cook the chicken 1. Season chicken with paprika, thyme, salt, and pepper. 2. Remove onions from the pan. 3. Brown the chicken for 5–6 minutes per side until golden. 4. Return the onions to the pan. 4. Make the sauce 1. Pour in the beef stock and Worcestershire sauce. 2. Simmer for 10–15 minutes until the chicken is cooked through. 3. If you want a thicker gravy, stir in the cornstarch slurry and simmer for another 2 minutes. 5. Add the cheese * Sprinkle cheese over each piece of chicken. * Cover the pan for 2–3 minutes until melted. To serve Spoon a generous amount of mashed potatoes onto each plate. Place the chicken on top, then spoon over plenty of the caramelized onion gravy. Finish with chopped parsley.
