Quick Sheet Pan Nachos Salsa • 6 tomatoes, chopped • 1/2 red onion, chopped • Handful of cilantro, chopped • Juice of 1/2 lime • 1/2 tsp salt Combine all ingredients in a bowl and mix well. Set aside. Guac • 2 ripe avocados • 1/2 red onion, finely chopped • Juice of 1/2 lime • Handful of cilantro, chopped • 1/2 tsp salt Mash the avocados in a bowl, then mix in the remaining ingredients until combined. Queso • 2 tbs butter • 2 tbs flour • 2 cups heavy cream • 8 oz cheddar cheese, grated • 8 oz Oaxaca cheese, grated • 4 oz Monterey Jack cheese, grated • 1/2 tsp pepper • 1/2 tsp salt • 1 tsp paprika • 1/2 tsp cumin In a pan over medium heat melt the butter. Add the flour and stir until smooth. Slowly whisk in the heavy cream and continue mixing until smooth. Once the mixture begins to gently bubble, reduce heat to low and add the cheeses and seasonings. Stir until fully melted and creamy. Additional Ingredients • Taco meat • 4 oz Monterey Jack cheese, shredded • 4 oz cheddar cheese, shredded • Sour cream • Green onions, sliced • Tortilla chips Pour the queso onto a baking sheet and top with taco meat and shredded cheeses. Broil until bubbly and golden. Spread tortilla chips onto another baking sheet, then pour the hot meat and cheese mixture over top. Finish with salsa, guac, sour cream, and green onions.
