PSA: this pasta salad is about to become your most requested dish 🫠 Street corn inspired pasta salad with Elote dressing and cotija cheese   Recipe Below ⬇️  *To make enough for a crowd of ~10* INGREDIENTS • 8oz pasta, dry, I use a box of @Banza Rotini chickpea pasta but any pasta works  • 4 cups cooked corn • ½ c cotija cheese, crumbled (or feta) • ½ a red onion, diced • ½ c fresh cilantro, chopped • 1 jalapeno pepper, pulp & seeds removed, chopped • 1 c plain Greek yogurt • 2 Tbsp mayonnaise • 1 lime, zest and juice (ab 2 Tbsp) • ½ tsp chili powder • ½ tsp smoked paprika • ½ tsp garlic powder • ½ tsp kosher salt, more to taste • dash black pepper DIRECTIONS 1. Cook pasta according to the package. If you prefer al dente, cook it 1-2 min less than it calls for. When pasta is done, drain & toss in a drizzle of olive oil to prevent it from sticking together and let it cool. 2. Cook corn (or use frozen): If using fresh, cook using your preferred cooking method & remove kernels from cob. I coat mine w olive oil, & s+p, wrap in foil, and roast in the oven at 425°F (220°C) for 30 min. If you have a grill, even better. If using frozen corn, heat in skillet on med-high until thawed and warm, ab 4-5 min. 3. Make dressing by combining Greek yogurt, mayo, lime zest, lime juice & spices. Whisk until creamy.  4. Assemble: add cooled pasta, corn, cilantro, red onion, cotija cheese, and jalapeno to a large bowl. Pour dressing on top and toss.   STORAGE • Refrigerator - store in an airtight container in the fridge for up to 4-5 days.
