@alikaeats: Ube mochi ice cream 💜🍨 using my favorite flavor from Elena’s on Orange in New Haven, CT! #ube #dessert Ingredients: - your favorite ice cream - 1/4 cup mochiko rice flour - 1/4 cup water - 1 tbsp sugar Steps: scoop ice cream into round balls and place on a parchment lined plate, then freeze for at least one hour. In the meantime, prepare mochi by mixing mochiko flour, water, and sugar until combined. Microwave in 30 second intervals, mixing in between, until it becomes stretchy and glossy. Pour onto a cornstarch floured surface and dust cornstarch on top. Allow to cool for a few minutes, then gently flatten with your hands, and then with a rolling pin. Cut into 4 even pieces, then continue to roll out each piece until quite thin. Allow the mochi to cool completely before wrapping. After the ice cream has been hardening for one hour, wrap the mochi around the ice cream, then pinch it together. Cover in a piece of plastic wrap, then twist it closed. Put it back in the freezer for at least one hour before serving. Make sure to work quickly so the ice cream doesn’t melt (I would work on one ice cream ball at a time, with the rest in the freezer).
