Stir in the red wine to deglaze the bottom, then add the bone broth. 6. Return the meat to the pot; increase heat to high and bring to a boil. Add the fresh thyme and rosemary sprigs. Cover with a lid and place in the oven for about 3 to 3½, or until the roast is fall-apart tender. 7. Remove from the oven and let rest 5 to 10 minutes before serving.
