Oh I have a slightly different take on "Feel free to try to stop me" actually! Dottore has just asked about his future plans, and upon hearing Pantalone's response, he reprimands him and is attempting to assert some control over the situation. Pantalone taunts him to reject this idea and remind Dottore that he's already past the point of no return, and it would be futile to pretend otherwise. Even when he mentions it being early to be saying goodbye, it's not the goodbye itself he opposes, but how sudden it seems (which is also why he adds the bit about resuming their conversation later). I think that he was trying to point out the lack of their future together because pretending otherwise would be cruel to both of them. However, he does this in a way that still eggs Dottore on and prompts him to continue playing their game, just with an awareness of the ending so they're able to steel themselves against it

Pantalone gave his mora, so the scale is more heavy on his side, it means he gave more than he need, the fact that he went to sumeru by himself to fulfill his promise to dottore too. They act like their relationship is pure benefit, but it more deep than they want to admit.
