Beetroot Kubbeh 🇮🇶  Ingredients:  Meat mixture: 2-3 Tbsp olive oil  1 medium onion (chopped)  500g ground beef  2 cloves garlic (minced)  1 tsp cumin  1/2 ground nutmeg  1 tsp kosher salt  1 tsp black pepper  For the dough: 300g semolina  1/2 tsp kosher salt  160ml water (can be added if necessary)  For the soup: 2-3 Tbsp olive oil  1 medium onion (chopped) 3 cloves garlic (minced) 3 celery sticks with leaves 3-4 grated beets (medium size) 3 full Tbsp tomato paste  1 tsp cumin  1 tsp black pepper Salt to taste  Water  2-3 squeezed lemons  Method:  1. In a wide frying pan, pour oil and fry the onion until golden brown.  Add the garlic, meat and spices and mix until the meat changes color and is fully cooked.  2. Grind half of the meat mixture in a food processor. Combine with the other half and form balls. Freeze the balls for an hour (or overnight).  3. Prepare the soup: Fry the onion with olive oil until golden brown. Add garlic, celery, grated beets, tomato paste and spices. Mix well.  4. Add water to 3/4 the amount of the pot. Cook for about an hour with the closed lid.  5. While the soup is cooking, prepare the dough: In a mixing bowl, mix the dough ingredients well until you get a nice dough. Cover with plastic wrap and let rest for 5-10 minutes.  6. Take a piece of dough and with greased hands, flatten it into a thin sheet and wrap the frozen meatball. Repeat with the rest.  7. Back to the soup. Squeeze 3 lemons into the soup and adjust seasoning if necessary.  8. Add the kibbeh balls to the soup. Cover and cook over medium-low heat for 40 minutes.  9.
