Honey Chipotle Chicken Street Corn Bowls This easy dinner is perfect for meal prep or busy weeknights and comes together with simple ingredients the whole family will love! Ingredients Cilantro Lime Rice 2 cups uncooked white rice 4 cups water 1 tablespoon butter 1 bunch cilantro, chopped Juice of ½ lime Olive oil, to taste Salt, to taste Honey Chipotle Chicken 2.5 pounds boneless, skinless chicken breasts or chicken thighs Equal parts: salt, pepper, oregano, and paprika 1 cup mayonnaise 2–3 tablespoons chopped chipotle peppers in adobo sauce Hot Honey Street Corn (Elote) 1 (15-ounce) can whole kernel corn, drained and rinsed ¼ red onion, finely diced ½ bunch cilantro, chopped 2 tablespoons crumbled cotija cheese ½ cup mayonnaise ¼ cup sour cream Tajín, to taste Elote seasoning, to taste Optional Toppings Extra cotija cheese Fresh cilantro Lime wedges Avocado Hot sauce Directions 1. Add the rice, water, and butter to a rice cooker (or prepare on the stovetop according to package directions). Once cooked, fluff with a fork and stir in the chopped cilantro, lime juice, a drizzle of olive oil, and salt to taste. 2. While the rice cooks, season both sides of the chicken with salt, garlic powder, oregano, and paprika. 3. In a small bowl, combine the mayonnaise, chopped chipotle peppers, and honey. Spread the mixture evenly over both sides of the chicken. 4. Heat a large skillet over medium heat. Cook the chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F. Let the chicken rest for 5 minutes before slicing. 5. In a medium bowl, combine the corn, red onion, cilantro, cotija cheese, mayonnaise, sour cream, Tajín, and elote seasoning. Stir until well combined and adjust the seasonings to taste. 6. Assemble the bowls by adding a generous scoop of cilantro lime rice, sliced honey chipotle chicken, and the creamy street corn mixture. 7.
