Find my cookbooks in my bio 👀💖 - Cake: ✰ 1/2 cup (113g) 0% Greek yogurt ✰ 1 cup (240g) applesauce ✰ 1/2 cup (100g) monk fruit sweetener ✰ 2 eggs ✰ 1 tsp (5g) cake batter extract ✰ 2/3 cup (80g) flour ✰ 1 scoop (37g) protein (I used 1UP Birthday Cake) ✰ 1 tsp (5g) baking soda ✰ pinch salt Frosting: ✰ 1/2 cup (227g) 0% Greek yogurt ✰ 1/4 scoop protein (I used 1UP Birthday Cake) ✰ 2-3 tbsp powdered monk fruit sweetener ✰ 3 tbsp sprinkles 1. Preheat oven to 350°F. 2. Mix cake ingredients and bake for around 20-25 min or until toothpick comes out clean (do not over-bake!). I used mini 9-inch cake pans. 3. Combine ingredients for frosting. 4. Use a mug, cup or container to cut 4 holes in the cake. 5. Assemble layers: cake, frosting, cake, frosting, sprinkles. 6. Optional: Combine edges and leftover frosting form balls, and cover in chocolate to make cake pops. 7. Enjoy! Note that the sprinkles bleed quick so only dip the cakes right before eating!
