Chicken cutlets in NJ are $2.49-2.99 per lb. Ground chicken is $3.99 lb, much more expensive. But it still looks delicious if you happen to find ground on sale.

I think ground chicken is more expensive than our store brand chicken breast. I filet them and roll them out can feed 4 with 2 breast.

You can use a thin coating of mayo in place of the egg. I actually mix seasonings and parm right into the mayo as well. I make my regular cutlets that way because I love crispy but hate frying at home. Crispy every time because of the oil in the mayo, and the mayo completely disappears...(for those of you who dislike mayo).

For the people saying ground chicken is more expensive apparently doesn’t have a Publix, the springer mountain farm’s ground chicken goes on sale all the time for 3.99 or Buy one get one free (rings up half price) then you can print 2 (1.50 coupons) from the springer mountain farm’s website makes them 2.49 a pound or less, I actually use this for taco meat but I’ll definitely try this next time

What gets lost is how she melted the mozzarella’s in the last stage to keep it from getting soft and soggy from the sauce. Can be done by adding a couple of slices to butterflied and pounded chicken breasts w/ Italian flavored breadcrumbs and the thinner filets will bake to a crispy golden brown at the same temp in half the time. You get consistent crispy, cheesy, tomato sauce covered bites.
