I love it in congee, just put salty eggs mince on olive oil heat it up w shrimp, and add overnight rice, add water, add these thousand years eggs, cut it, and add a dah of soy sauce, you can eat, very good, I add some meat too.

🧾 Ingredients (2–3 portions)
Century Eggs
-Century eggs (皮蛋): 1–2
-Preferably soft yolk, low alkaline flavor
Peppers
-Green long peppers: 3–4
Seasoning
-Garlic: 3–4 cloves
-Light soy sauce: 1 tbsp
-Sesame oil: a few drops
-Black vinegar: a few drops
-Salt: to taste
-Sugar: 1/2 tsp (optional)
To Serve
-Steamed white rice
🍳 Method
1. Place the green peppers directly over flame or onto a dry iron pan. Char them completely until the skin turns black and blistered.
2. Let them cool slightly, peel off most of the burnt skin, and remove seeds if you want less heat.
3. Smash the peppers together with raw garlic using a mortar and pestle. Don’t chop — smash. You want texture.
4. Peel the century eggs and cut them into quarters. Wet the knife first so they don’t stick.
5. Add the eggs into the mortar and gently smash everything together. Not into a puree — keep uneven chunks.
6. Season with soy sauce, sesame oil, black vinegar, salt, and a tiny bit of sugar if needed.
7. Plate everything and finish with chili oil, sesame seeds, and spring onion if desired.
8. Eat with plain white rice. The rice balances the intensity perfectly.
