I love you all dearly. 🤍 Recipe we made: • 1½ lbs beef stew meat • 2½ Tbsp olive oil • Salt and freshly ground black pepper • 1 large yellow onion, chopped • 3 medium carrots, peeled and chopped • 3 medium celery stalks, chopped • 4 cloves garlic, minced • 8 cups low sodium beef broth or chicken broth • 2 (14 oz.) cans diced tomatoes • 1½ tsp dried basil • 1 tsp dried oregano • ½ tsp dried thyme • 1 lb red or yellow potatoes, chopped into ¾-inch cubes • 1½ cups chopped green beans • ⅓ cup chopped fresh parsley We skipped the frozen corn and frozen peas. For seasoning, we also added beef bouillon plus extra salt and pepper to taste.
